Summer may be winding down, but we can’t stop our grilling fever! Since Sara got her new grill this summer we’ve really been grilling a lot of meals the past few months. It really is one of the best ways to cook, especially in the summer. Imagine how excited we were when Hamptons Lane contacted us about making a recipe with their Modern Grilling box. Of course it was a no brainer! So, with Modern Grilling box in hand, we decided to make some of these Pineapple Shrimp Kabobs. They’re delish, easy to make, and will definitely satisfy your seafood craving.
Before we get into our recipe we wanted to let you know a little about Hamptons Lane and the Modern Grilling box. Hamptons Lane is a subscription based service. Basically you join the Hamptons Lane club and get your first box. Each box contains 4-7 specialty tools and shelf-stable, full size ingredients, along with recipes and tips for you to use. Every month they reveal a different box, and you can skip if its not for you, or you can also swap it out for a different box. They have all different boxes available in addition to the Modern Grilling one, like Pizza, and the latest – Ice Cream!
We were really surprised by the value of things in these boxes. In our Modern Grilling box we got a Himalayan Salt Plate, Mable’s Liquid Gold BBQ Sauce, Jamaican Jerk Pineapple Chutney, 8″ Bamboo Skewers, and the recipe and how to guide. Just the salt plate and a jar of sauce makes your value add up, plus they’re full size items! We also loved that these boxes are really geared for the home cook. There’s not a lot of “snack” stuff, and they include lots of useful and cool tools to use in your cooking at home. We always tend to like boxes that emphasize cooking, not just snacks and sauces, and these guys definitely do!
We decided to use the Jamaican Jerk Pineapple Chutney as the real base for our Pineapple Shrimp Kabobs. Pineapple and shrimp is such a classic combination, so we couldn’t resist using them together! First we marinated about 1 pound of raw deveined shrimp in some of the Jamaican Jerk Pineapple chutney. We recommend leaving it to sit overnight, or at least 2 hours. This lets the flavor of the chutney REALLY get in there.
You’ll also need to warm your salt block. Now we have never used a salt block to cook with before, but they’re definitely all the rage right now, especially with grilling. Needless to say, we were excited to give it a go! To heat up your salt block you just put it on your grill and slowly heat it to about 400-500 degrees(or about 30 minutes). This will make it hot enough so that you can sear your shrimp on it. You can even do steak, chicken, veggies, whatever you want on it. The salt block adds a lot of flavor to the meat and makes it so yummy!
Once your shrimp is marinated, and your salt block is hot, you can assemble your skewers. Make sure to soak your skewers in water (if you’re using bamboo) so they don’t catch on fire or anything. We also added some fresh pineapple to our kabobs to really add some sweetness to the dish. Place your assembled kabob on the salt block and let it cook for about 5 minutes on each side, or until the shrimp goes from translucent to white in color. That’s pretty much all there is to it. We were actually kind of amazed to see the shrimp actually sizzling over the salt block. How cool!
In short we HIGHLY recommend Hamptons Lane, especially since its really geared for the home cooks like us out there. They have great tools that will enhance your cooking, plus it’s flexible enough that you can skip boxes or even trade them out for a different past box. They’re definitely cool in our book, and we can’t wait to try one of the next boxes.
