Well everyone, Memorial Day Weekend is upon us. This is a time where we honor those who have passed in service of our country, and celebrate with the people around us. Even though it’s very much a reverent holiday, many people get together for the long weekend and have bbqs, picnics, and other gatherings. So we wanted to show these really quick and fresh Avocado & Shrimp appetizers that you’ll be able to have at any gathering this weekend. This is a little bit of a different take on cocktail shrimp, adding more flavor, and incorporating the freshness of the avocado & tomato.
To make these Shrimp & Avocado appetizers you’ll need a few things (Makes 14):
14 Cocktail Shrimp – Fully Cooked, Deveined etc.
1 Avocado
14 Cherry Tomatoes
Red Pepper Flakes
Salt
Black Pepper
Chipotle Pepper
The first thing you need to do is thaw your shrimp. You can do this by putting them in the fridge overnight, or rinsing them in hot water. Then prepare the avocado. Slice the avocado into small chunks and set aside. When everything is prepared, use toothpicks to put the appetizers together. Put the tomato, avocado, and shrimp on your toothpick like little skewers. Place them all on a serving tray. Top with a pinch of salt, red pepper flakes, black pepper, and chipotle pepper. This gives it a little bit of heat and flavor, but not too much to overpower the other flavors. Plus it gives it some more color! You can serve with cocktail sauce on the side, or not. We think it’s great without but it’s completely up to you.
That’s it. Now you have a fresh appetizer for your next gathering! You can also adapt this and add more seasonings, as well as make a larger bit if you’re going to have a lot of guests.
